So let's just say I haven't been the most diligent with my healthy eats this weekend. With chocolate binges being just one of the naughty indulgences on the top on my list of "not so clean" eating, I knew when I woke up this morning that I had to start the day off right. So, per usual, I made a big bowl of Lara's Perfect Oatmeal, then waited a bit to digest before I hit the gym for an hour on the treadmill (very necessary).
After my workout I was craving some more food, naturally, and decided to try a new type of Miracle Noodle--the Fettuccine noodles. I boiled them up and tossed them into a bowl with chopped avocado, arugula, tomatoes, lentils, and drizzles balsamic vinegar on the top for a perfect finish. Just the lunch I was craving :)
