Light Dinner

After a weekend of festivities, it's always nice to end with something that makes me feel as if I wasn't being too indulgent. Granted, a salad would have worked just as well, but I wasn't in the mood to slave over my vegetables, only to decide it didn't look as appealing as I thought it would. Amanda and I took a trip to Whole Foods to pick up some groceries for the upcoming week, and I made an amazing discovery: they do a "build your own" sushi station. Brown rice, tuna, avocado, and cucumber, rolled right in front of me and looking fresh and delicious as ever--and I didn't even have to wait at a restaurant.

They looked so good, I nibbled a couple pieces in the car before we even got home
